Now we don’t really care about the water content, so we have to cut that out.

40% of 750 ml is 300 ml.
64% of 750 ml is 472 ml.

This leaves us with 300ml of Appleton and 472ml of Whites that we can use.

If 300 ml cost $18 then 1ml cost 0.06
If 472 ml cost $21 then 1ml cost 0.04

Working with the above figures we see that the Appleton is 14.3% cheaper than the Whites. However, you get 36.5% more for the Whites.

To keep it simple, you would have to pay BD$28.32c to get enough of Appleton Special get the same level of smashed that a $21 bottle of Wray and Nephew Whites would provide.

When it comes to getting smashed the journey is just as important as the destination. So spend the extra cash and get the Appleton … it tastes better!

This is how I use the math I learnt in high school. And my classmates said we would never need it. Ha!

Peel and cut up the mango to put In a blender. Add rest of ingredients and blend until slushy. Serve in tall glasses with a mint sprig on the side for garnish. Serves 4

Screech Rum…The Taste of Legends.  Would they have sailed 5,000 miles for bad rum?  Not bloody likely. 

The legend of the famous Newfoundland Screech Rum is as interesting as it is humorous.  We have all seen the twisted face and heard the guttural gasps of someone trying to prove their tenacity by taking a hit of hard liquor.   It unexpectedly warms their lips, burns their throat and lights a fire through their lungs.  This particular scenario is exactly how Screech Rum came to be named. Of course to feel the full effect of the colorfully woven tale, go to the Screech Rum website.  The history of the rum is part of the taste experience. 

While Screech Rum is no longer at such a high proof it would cause someone to “screech” upon sampling, it will warm the soul.  Screech won a gold medal for excellent taste in 2003 at the International Rum Festival and continues its longstanding reputation as a Newfoundland favorite.  The reason why is obvious; taste.

Dark rums such as Screech Rum beg to be sipped neat, which is exactly the manner in which I sampled it.  The color is beautiful deep caramel.  At first the primary aroma seemed to suggest cherries.  The first tasting had a sharp edge to it with overtones of cherry and hints of wood or nut.  The longer Screech Rum sat open and warming to my palm the more the scent of cherry combined with chocolate sprang forth.  The hard edge smoothed out and the aroma of the chocolate began to release to create a slight feeling of chocolate covered cherries without the heavy sweetness in taste.  Screech Rum benefits greatly by being allowed to sit open for a few minutes before enjoying neat.  I found it quite soothing.  It is an excellent addition to the liquor cabinet.

Screech Rum did not forget about the pleasure of cocktails.  They had quite a bit of fun not only with the recipes, but clearly with the names.  My favorite name has to be “Muffled Screech”… “No one can hear your scream…”  Now that sounds like something to serve at a party.  To see the recipe go to Screech Rum Recipes in my recipes section or go directly to the Screech Rum website.  My review on the use of Screech Rum in cocktails coming soon. 

2- 8 oz containers plain yogurt
1 4 oz package instant vanilla pudding mix
1/2 cup crushed pineapple, drained
1 teaspoon coconut extract
1 teaspoon rum extract
1 cup Cool Whip

In medium bowl, blend yogurt and pudding mix; stir in pineapple and extracts. Fold in whipped topping. Cover and refrigerate for at least 2 hours.
Serve with strawberries, bananas, angel food or pound cake cut into small pieces

It's not that it's thought of as a bad rum (although I do remember hearing it described as a "rum-flavoured vodka" by a brand ambassador from a rival), it's more that there are other rums that are considered "better". There's a comparative tasting of white rums at Scottes' Rum Pages which uses it as a base against which the others are judged. It doesn't fare well.

All in all, the Bacardi surprised me by being better than expected. This certainly wasn’t a great rum - even calling it good would be a compliment. But it was better than I expected.

Honestly, I think the bad press that Carta Blanca gets isn't entirely deserved. I agree that there are more flavourful white rums out there, but for me, white rum isn't about big flavours. If you want complexity, leave it in the barrel and the hell away from the charcoal filters. Bacardi Superior, for better or worse, embodies the idea of a light, uncomplicated, charcoal-filtered spirit distilled from molasses. Whether it's the best embodiment of that idea is a discussion for a different day.

It's also irrelevant in this context. After all, the rules are the rules. Even if I hated Bacardi Superior, I'd be stuck with it, and the sentence "I'd much rather use Brand X instead, but hey, whatever," isn't one you want to say in a competition. On the upside, I had been lucky enough to do some training with Ian McLaren, Training and Mixology Manager at Bacardi UK (you can see his contribution to the first edition of the Legacy Cocktail book here). On what? Helpfully enough, we did an whole afternoon on Bacardi Superior.

There are things that everybody knows about Bacardi. The distillery was founded in 1862 by Don Facundo Bacardi Y Masso, formerly an importer of brandy and wine from Spain. Thirty years later, his rum was credited with saving the life of the Spanish king, and in October 1960, the company made its escape from Castro when troops raided the Edificio Bacardi - its headquarters in Havana - instead of the distillery where all the important stuff was. Then there's the thing that aren't so well known. For one, Bacardi Superior is barrel-aged for at least 12 months. And there's more: it's made from two distillates, each undergoing separate fermentation and distillation processes, and the colour removal that comes from charcoal filtration isn't or at least wasn't, initially, intentional.

The key to Bacardi's rums is that split-production process; the two distillates, known as the aguardiente and the redistilado are very different in character. The former is heavier, more pungent, coming off the still in the ballpark of 80% ABV. The latter is much lighter with some interesting floral and citrus notes, and is column-distilled five times. In something like the Bacardi 8 year old they combine to devastating effect, creating a rum that is still recognisably Cuban/Spanish in style but that also has some of the depth of flavour found in an English style rum. Unfortunately, the effect isn't as pronounced in the Carta Blanca, but maybe there's enough in there to work with.

Election Day is just around the corner.  As the final debate draws close and political campaigns reach new heights, the thirst for decision time stirs every voter to a verdict; which candidate has the best mixed drink to muddle the mind?  All kidding aside, 10 Cane Rum has developed their own versions of election year cocktails for Obama and McCain fans and even those who are still undecided. 

 

One thing that is clear, 10 Cane Rum is the perfect choice for your rum based cocktails.  This LVMH, Moët Hennessy product is created from the first pressings of the sugar cane stalks rather than the byproduct of sugar (molasses).  The flavor is lightly sweet, delicate and smooth.  There is slight warming in the finish with possible notes of spicy vanilla that linger on the palate.  Each layer of flavor signifies a delightfully created premium rum. 

 

In no particular order are the Obama, McCain and Undecided Cocktails.  Try them all and cast your vote for favorite.  I would love to hear what you think.  While we are at it, my question is…do the candidates have a favorite cocktail?

1-1/2 ounce 10 Cane Rum

1 ounce Grand Marnier

1/4 ounce Orgeat Syrup

1 ounce Fresh Squeezed Lime Juice

1/4 ounce Simple Syrup

Garnish:  Mint Sprig & Lemon Wheel

 

Directions:  Combine all ingredients into mixing glass.  Add ice and shake vigorously.  Pour all contents into a rocks glass.  Garnish with mint sprig and lemon wheel.

McCane Mojito

2 ounce 10 Cane Rum

1 ounce Fresh Squeezed Lime Juice

1 ounce Simple Syrup

8-10 Mint Leaves

Splash of Club Soda

Garnish:  Mint Sprig

Directions:  Place mint leaves and simple syrup in the bottom of a tall glass.  Press gently with a muddler. Fill with cracked ice.  Add 10 Cane and lime juice.  Stir gently and top off with soda.  Garnish with a mint sprig.  

John 10 Cane Punch

2 ounce 10 Cane

1/4 ounce Pineapple Juice

1/4 ounce Fresh Lime Juice

1/4 ounce Grenadine Syrup

Directions:  Combine all ingredients into a mixing glass.  Add ice and shake vigorously.  Strain into a chilled cocktail glass or on the rocks with a lime or a flag!

Red, White, & Blue Mojito

2 ounce 10 Cane Rum

9-10 Mint Leaves

Juice of 1/2 Lime

Splash Simple Syrup

Club Soda

5 Blueberries

2 Strawberries, Quartered

Directions:  In a mixing glass, combine 10 Cane, mint leaves, lime juice, and simple syrup.  Add ice and shake vigorously.  Pour into a highball glass, add fruit, and top with soda.

Try out this receipe and experience yourself:

CHILLED POACHED PEACHES IN WHITE RUM for eight

Ingrediant:

Poaching liquid

1cup white suger

2 cups water

1 vanilla pod or 1 tsp of essense

Half cup white rum

Juice from half lemon

Optional: 2 tbs strawberry jam

4 peaches

A handful of fresh or dried cherries, strawberries or raspberries

To Serve with: Low fat yogurt | Fresh Mint

METHOD

Place sugar, water, vanilla pod or essence and rum in a pot large enough to accommodate the fruit.

Heat till sugar dissolves, then add a squeeze of lemon juice and place the whole fruit into the pot. If you are using white peaches, add strawberry jam to colour the proaching liquid.

Put a small plate over the fruit to hold them down in the liquid. Cook over gentle heat for about 15 mins and test with the tip of a knife inserted gently into the fruit. It should be soft but not mushy.

Remove fruit with a slotted spoon and allow to cool. Continue heating the liqud till it thickens into a light syrup.

The skin of the peaches should be quite easy to remove by now. Cut peaches into half and remove the stone within.

Return peeled peach halves into the poaching liquid and add fresh or dried cherries, strawberries or raspberries. Leave to steep in liquid for a few hours in the fridge.

To serve, place a peach half in a bowl, spoon over some syrup. Add cherries or berries, a dollop of yogurt and finish off with a sprig of mint.

There you go, a nice bowl of low-fat dieting desert: Chilled Poached Peaches In White Rum!!

Well, I am honest enough to admit that Zacapa is the shit. But no wonder, the youngest rum they offer is 15 years old (only 16 and 21 year old rum is sold as export and of course the older stuff I cannot afford). Still, what makes Flor de Caña special is the way you drink it: at the beach, with friends, in the dark (when electricity has disappeared) and out of the bottle. No, that's not what I wanted to say. Again: Zacapa is the best rum I know to drink straight. Flor de Caña has a fabulous taste too, but it's not quite the same category. It is, however, the best rum I know to mix with. I have to say that I don't mix it so much with Coke anymore. Being in Costa Rica, you get used to the daily availability of fresh fruit and that's what I love mixing it most. I tried a dessert from peaches, peppermint and rum. I really liked it, it was very refreshing and crunchy - a good dessert I would say. J was not so enthusiastic about it - according to him peaches were not ripe enough and peppermint leaves were too big and ice cream I served it with was weird...But what does he know? Well, he was actually right in the sense that the peaches were suppose to be softer because the recipe called for "ripe peaches". So in theory this dessert was meant to be soft and smooth, but I did not have extra ripe peaches at hand...but I so very much wanted to try this dessert, so...sue me! 

Will try with ripe peaches the next time though. Or with ripe nectarines or apricots. Should be just as good. 

Serves two:

# Warm the rum and sugar in a small pan over a low head until the sugar has dissolved. 

# Bring to boil, then remove from the heat and swirl in the lime zest and juice. 

# Halve and stone the peaches, and cut into chunky dices. Put them in a bowl with chopped mint (try to chop very small pieces), pour in the warm syrup, and stir gently to mix.

# Cover and refrigerate for a couple of hours before serving. Serve with ice cream or some whipping cream or without any supplement.

A good idea to serve as a dessert in the evening, when you have a busy day ahead but some friends are coming over for a snack (just prepare it in the morning - it takes only 15 minutes - and refrigerate until the evening). Comments: Starts with a woody blast. Then becomes woods (a really nice sandalwood/cedar blend) and alcohol. Also a hint of vanilla and spices. This is what I wish Kenzo Amour and that ilk was. Hovers here for a couple of hours. Dries down to a spicy vanilla musk. Gone in 6 hours.
